In late 2018, renowned Chef Vitaly Paley opened his fifth restaurant, Rosa Rosa, located in Downtown Portland on the ground floor of the Dossier. Vitaly Paley, the James Beard Award-winning chef of Paley’s Place, Imperial, Headwaters and The Crown opened Rosa Rosa with his partner and wife, Kimberly Paley, and Executive Chef Kenny Giambalvo.
Rosa Rosa, named after Paley’s grandmother Rosa and as an ode to the City of Roses, takes inspiration from the rich culinary traditions born across the Ottoman and Roman Empires, from the Caucasus Mountains to the Mediterranean Sea.
With Rosa Rosa, Chef Paley brings together ingredients and flavors from recent travels to Turkey and Georgia, where Vitaly and Kimberly have deep family roots. Those exotic flavors, combined with the comforting Italian fare of New York City where they met and lived for many years, round out the menu at Rosa Rosa.
Rosa Rosa offers house-made pastas, locally sourced salads, shareable plates and seasonal specials, such as Çiya-style lamb meatballs stewed in sour cherries, tomatoes, sumac and shallots; and Chicken Chkmeruli, the signature pressed chicken from Hotel Zuzumbo in Telavi, Georgia.
Beyond the all-day dining space, Rosa Rosa’s Back Room, offers a more intimate setting for dinner. Executive Chef Kenny Giambalvo find his inspiration for the Back Room menu from New York-Italian classics.
